From the farms of Rwanda, an uncommon cherry known as a peaberry is harvested and separated from the rest of the crop. Peaberries make up about 5% of all the coffee harvested in the world. Peaberries are the result of a natural genetic variation where only one of the two coffee seeds in a cherry is fertilized, thereby producing a much smaller and rounder bean instead of the common larger, flat bean shape.
