Uncle Buc’s Coffee Meat Rub

Ingredients:

  • 2 tablespoons ground coffee beans
  • 2 tablespoons ground black pepper
  • 1 ½ tablespoons kosher salt
  • 1 teaspoon cayenne pepper
  • 1 tablespoon cumin

 

Instructions:

Preheat the oven broiler. Place the ground coffee on a sheet of aluminum foil, and place about 6 inches from the heat source. Broil for about 45 seconds, shaking the foil about every 10 seconds, or whenever you see smoke.

In a small bowl, stir together the coffee, black pepper, salt, cayenne pepper, and cumin. Rub into steaks, or pound in with a meat mallet. Grill as desired.”

  • ⅓ cup fresh ground coffee
  • ¼ cup cocoa powder
  • ⅓ cup dark brown sugar
  • 1 tbsp paprika
  • 1 tsp cinnamon
  • 1 tsp cayenne pepper
  • 1 tsp salt

 

Instructions:

“Mix ingredients together and store in an airtight container like a mason jar.

Use on beef, chicken, pork or other meats.”

  • ¼ cup finely ground coffee
  • ¼ cup brown sugar
  • 2 tablespoons chili powder
  • 1 tablespoon black pepper
  • 2 tablespoons salt
  • 1 tablespoon onion powder
  • 1 tablespoon garlic powder
  • 1 teaspoon cocoa powder
  • ½ teaspoon cayenne

 

Instructions:

“Combine all ingredients in a bowl. Whisk together until well blended. Rub 1 tablespoon per pound into your meat. Allow to set in refrigerator for several hours. Pour any remaining rub into airtight jar. It will remain fresh for about six months.”

  • 3/4 teaspoon chili powder
  • 3/4 teaspoon ground ginger

 

Instructions:

“Mix all ingredients in a medium bowl. Transfer to an airtight container. DO AHEAD: Spice rub can be made 1 month ahead. Store airtight at room temperature.”
